Suddenly, you realize the only sustenance you have at home is a half-box of Zesta crackers and some duck sauce packets. BLAST! Guess you’ll have to swing by the grocery store first . . . BUT WHAT TO MAKE??
Enter Lindsay Ostrom. Lindsay is a former 4th grade teacher/part-time food blogger. In 2014, after much deliberation, she followed her nose into the kitchen full-time (thank freakin’ goodness). ON TO THE FOOD!
Friends, let us start with breakfast. It's touted as the most important meal after all. And if your taste buds have yet to experience shakshouka, get ready to wake the fuck up. The red version of this gloriously spicy and saucy Middle Eastern egg dish typically takes the spotlight, so when we saw it in green, we kinda EEP'd at our smartphones in the middle of the cereal aisle. All of the flavor profiles are still actualized in this version, but are somehow springier. The herby cilantro, tingly jalapeno, creamy avocado, and sweet and roasty pistachios caress the buttery egg yolk in a way the assertive tomato never could. Not a fan of rice? CHALLAH! A nice flaky flatbread is a MUST with shakshouka. Good luck quarantining this recipe in breakfast land.
We're huge proponents of cauliflower. Ever since we discovered cauliflower pizza crust, we've been mesmerized at what else this wizard veggie can transfigure itself into. Welp, POOF! We got a burger here! This meatless option is quite beefy in terms of what it's packing. We're talking protein-rich quinoa, savory almonds and CHEESE - the magical ingredient that binds this baby together. The spices make it super smoky, too. If you wanna go full monty, slap on some Magic Green Sauce and chipotle mayo. It's spellbinding.
So, um, chances are about 1,000,000 to 1 that we're eating this salad rn. It has a rather seasonal name, but transcends all equinoxes. It's just everything you want in a filling salad. Soft-n-creamy avocado - CHECK. Sturdy, starchy garbonzo beans - CHECK. Zesty chicky boob - CHECK. (We actually subbed in red grapes for the pomegranate arils for pure availability purposes and the extra juicy factor scored an A++.) Oh, and the dressing! It might be the reason we keep binging this divine salåd. Tart Greek yogurt, spicy Dijon mustard and sweet golden honey is just the start. It's luxurious. Like a spa day, ERRDAY!
Finally, some sweets! Now, don't let the seemingly difficult task of desserts-in-a-ramekin scare you here. This is the simplest, most scrumdelicious lava cake recipe out there. Besides, like Lindsay says on her blog, "IT'S MOLTEN!" Just let the molten carry you through the process. It's worth every ooey-gooey-chocolate-synapse-firing second. For reals.
Oh quitcher moaning. You can have craft beer or a margarita any time you go out. This drinky-poo is for you and your boo to make special at home - you know, as a reason to finally utilize that herb garden you planted. Lots of folks (including sour bartenders) make a big fuss about making mojitos, but there's not much to them. Liquor, herbs, sugar, citrus, bubbles - that's it. And there's something about picking the herbs and muddling the fruit that should be cathartic and energizing at the same time. That's what makes mojitos the freshest, most refreshing beverages EVER. And the addition of grapefruit in this recipe brightens everything up. Now grab a partner and get to sippin!
